I’m calling this a pie. Yes, it resembles a quiche, but I prefer to call it a pie. It seems more manly that way. Plus I wanted a more rustic looking version that does not require rolling anything out or having to make actual dough.
The crust here is cheese based, you just press it in the pan and it’s ready to go…no skills required.
While quiche is often served for just breakfast or brunch, this is definitely perfect for dinner too. It’s not eggy or flavorless. In fact it’s bursting with all kinds of tastes and works great for leftovers.

Here is the cheese crust pressed right into the bottom and up the sides of a 2-quart pan.

I steamed the cauliflower and broccoli in my favorite covered pan.

This is what it looks like before heading into the oven.

Enjoy this one over the weekend!

How do you think this would fare with Manchego? I cannot have cow’s milk cheeses and I don’t think Daiya would work well as a crust.

Pie? Quiche? Just call it Bacon! As in, “this is bacon! Eat!”

Would this work with Spinach?

You can always try it. You would have to experiment with what the right amount would be and watch out for the water content etc.

Yum! I want this! How about adding sun-dried tomatoes and parmesan?

In the ingredients list you have, “4.5 ounces sliced fresh mushrooms”, but I don’t see them anywhere in the directions. Are they added with veggies?
Cathy says
Sorry…fixed now.

I made this today & it’s delicious! Makes a lot…can this be frozen & reheated later? Considerable prep time might be noted? The directions mentioned adding shallots & onions to sauté (however onions not listed in recipe ingredients?) prior to adding other vegetables? Seemed ok without onions if adequate quantity of shallots added. How much onion (chopped & sautéed) would you recommend? Thanks for including Pinterest links-very user friendly for later reference or sharing.

Not a Cauliflower fan, could you use something else in it’s place, or just more Broc? I love chooped bacon, btw! 🙂

Hard to replace the texture of cauliflower.

Can frozen broccoli and cauliflower be used?
Cathy says
It will be too watery.
