It is seriously cold in Oregon right now and according to a poll I did on Facebook last night, it seems everyone is feeling a little “Arctic” at the moment. We currently have snow and cold temperatures, which means my oven is going constantly. Cold weather and baking just seem to coincide, at least for me.
The frigid weather has put me in the mood for one of the most comforting flavors I can think of, I call it the apple-cinnamon complex. Together apples and cinnamon are the perfect hand shake. Wouldn’t you agree?
I decided on a double dose of cinnamon with ground cinnamon and cinnamon chips to up the flavor profile. And then I wanted rustic, so I added oatmeal. Yes…it’s the perfect breakfast while sipping coffee and reading magazines. Snow falling in the background…of course.

I love these Wilton liners, they keep the muffins from settling on and sticking to the pan. I hope you have a chance to make these soon.

Dig in.

This is the kind of muffin everyone likes. Great for brunches.

Am I adding cooked oatmeal to the flour mixture or uncooked oats?
